Quick Salsa

Brian LOVES this salsa. We stopped buying salsa and experimented a bit. He says this remind him of restaurant style salsa. And, it's just as easy as the jam!

Ingredients:
1 can (14.5 oz) diced tomatoes (feel free to use fresh)
1/4 medium onion
8 slices of pickled jalapeno
2 cloves of garlic
Three small pieces of cilantro
Squeeze lime (or lemon)
Dash chili powder

Steps:
1. Toss everything in a blender on medium, until you reach the consistency you like.
2. Pour into glass container, let sit over night.

You can eat it right essay, however, we've found that it's really tasty after it's had a chance to sit together.

Easy Strawberry Fridge Jam

Another super easy recipe just for my amazing readers. :)

Ingredients:
2 - 3 cups fresh strawberries (if using frozen, let them thaw before you blend)
2 tbsp honey (or agave), or to taste
1 tbsp Chia seeds

Steps:
1. Toss all ingredients in a blender on medium. Just make sure everything is incorporated.
2. Pour into container and place in the fridge over night.

Bam! It's literally that easy. B prefers the fresh taste of this recipe.

Everyday Chili

Ok, as mentioned in my video, this is a very basic chili. I've added veggies to this as well as chicken. It's a vegan base that you can build on however you like.

Ingredients:
5 cups water
1 can (14.5oz) Diced tomatoes
16oz Dried beans (pinto or black)
2 cloves garlic, crushed
2 tbsp coconut oil (or olive oil, if you prefer)
2 tbsp nutritional yeast
1/4 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste

Steps:
1. Rinse and sort beans. Some people soak their over night, I don't in this recipe because they cook so long anyway.
2. Combine all ingredients in crackpot, cover and set to high for 5 hours. Stir occasionally.
3. Let sit in war crock for 20 minutes after heat has turned off.

That's it. It's seriously delicious. If you add veggies, remove a small amount of water.

Toppings approved of at the Dombroski abode:
*Greek yogurt
*Shredded cheese
*Pickled jalapenos
* Hot sauce

I'm sure you get the idea. It's also perfectly fine plain. Served over potatoes or noodles even. :) Careful with the carbs though. ;)

When life gets in the way.

Well...when I took on the challenge to blog every day, I didn't realize there were other plans.

Since that first post (and the only 8 or so videos) we have placed Pop in a facility, taken him to the hospital, then hospice, then done a funeral for him. Grandma and Aunt Tracy have been up here much of the past month with us during all the process.

Today G refuses to nap and I haven't done a video in weeks.

Eh. So, my dear readers, here we are, back at the beginning again. Though we are starting with an amazing anniversary gift from B...a VitaMix blender! That I have used every day we've been home since he gave it to me. It's deliciousness in a blender. Made smoothies, soup, pasta sauce...so much. I will be posting recipes to easy to make stuff that you can do in your own blender with a little bit of tweaking.

Nothing super amazing, but I promise to be back to InstaGram and Twitter soon. :)
